These natural shiitake come straight from the farmer in Shizuoka prefecture.

Instructions by the farmer:

1. Wash shiitake mushrooms under running water to lightly remove debris, and place them in a container. We recommend using an airtight Tupperware container or an airtight bag with a zipper

2. The most important point! Always use cold water!

Once the shiitake mushrooms are placed in the container, fill it to the brim with water, just enough to cover the mushrooms. Do not use lukewarm water, but cold water of about 5??C (41??F). Cold water absorbs the shiitake mushrooms well and releases a lot of guanylic acid, a unique umami component of shiitake mushrooms. The guanylic acid is at its maximum around 5 hours after you start to rehydrate them.

3. Depending on the type of shiitake mushrooms, place them in the refrigerator for about 6 to 12 hours to slowly return them to their original state. To extract the full flavor, it is important to allow time. If you use hot water or a microwave to rehydrate the shiitake mushrooms in a short time, the texture will not be as good as it should be, and the original flavor will be lost.
