Takahashi Shoten has made it its mission to create a soy sauce that the whole family can enjoy. Starting out as a grain distributor in 1852, proceeding to brew soy sauce just about 10 years later, they specialized in local, additive free and allergy friendly recipes that those sensitive to the common substances could enjoy too.

After being challenged to make a wheat-free soy sauce by a friend, the team experimented with local Japanese ingredients to find the best tasting soy sauce. After two years, they launched their successful ???Sora mame??? (broad beans) line up. During the research process, Mr. Takahashi learned so much about allergens and the demand for traditional Japanese foods, without the use of soy and wheat, that he decided to focus on allergen free products that could be enjoyed by anyone.

Soy sauce is a key ingredient in the Japanese kitchen, but generally a nightmare for anyone with a wheat or soy allergy. After elaborate testing, with ingredients like rice, sesame seeds and azuki beans, ???sora mame??? or ???broad beans??? were found to not only resemble the taste of general soy sauce, but to also be the most delicious one. Containing just sora mame and salt, the sauce allows a very wide range of people to enjoy a soy sauce flavor to their Japanese dishes!
