YUZUYA is based in Hagi, Yamaguchi prefecture. They farm and manufacture a number of Japanese citrus fruits of which they make drinks and condiments. Their mission is “From Hagi’s skies, from Hagi’s soils”, indicating that they work with all-natural, local ingredients and farming techniques, without adding chemical seasonings and food additives.
The raw materials are Japanese citrus fruits, like yuzu, sudachi and daidai, that are grown locally, including at their own “YUZUYA FARM” with over 5,000 yuzu trees. YUZUYA is dedicated to putting genuine flavor and the health of both employees and customers first. Taking tremendous amounts of time and effort, YUZUYA keeps production volumes low to offer the best quality possible; All thanks to the manual labor by their small, but dedicated and knowledgeable team.

Yuzu: Yuzu is difficult to harvest due to the thorns on the branches. The peel gives off a fresh and elegant scent, popular for foods as well as cosmetics. The deep flavor goes well with both savory and sweet dishes. YUZUYA produces a wide line-up, from vinegars, jams and straight juice. Next to being delicious, yuzu is full of nutritious vitamins: potassium, terpene, vitamin C, vitamin E, flavonoid and β carotene.
Daidai: Daidai is a shrub of the mandarin family. One daidai tree bears fruits successively for generations. It is called "fruit of happiness" and people plant the tree in their garden for good luck. Daidai is popular to sprinkle over sashimi or mix in a refreshing drink, and has a fresh, simple, and sweet flavor. It is rich in vitamin C, antioxidants and calcium.
Sudachi: Sudachi is a sour type of Japanese citrus, often not eaten on its own but in form of a vinegar, sweets, or soft drinks. In dishes, it is also very popular with fish or noodles. It is either used for its juice or the skin. Sudachi is high in vitamin C, potassium, vitamin A, calcium, vitamin E, iron, magnesium, and dietary fiber.

To avoid the rough, bitter tasting citrus fruits, YUZUYA presses and handles the fruits one by one, ensuring a rich aroma and full juice. The juices are bottled fresh, without chemicals or additives. Some of them are matured up to 10 months for a unique, intense flavor.
For processed items like ponzu, they work with high quality kombu (kelp) seaweed, dried bonito shavings and shiitake mushrooms. For their jams and marmelades they carefully slice the skins and ensure they keep their beautiful color, even without colorings and additives.
They work closely with other local farmers and are very dedicated to training their staff in farming knowledge, quality control and food safety.
