Chinriu Honten makes umeboshi since 1871 and is well know in Japan for the high quality of its products made of Japanese fruits.
Naturally ripened ume fruits of highest quality from selected contract farmers are pickled in salt and dried under the sun for a few days before maturing for three years to develop a very balanced flavor. Connoisseurs appreciate three years matured umeboshi because of their intense flavor albeit still being juicy. The first sensation is sour and salty and the second sensation is a long lasting very fruity flavor of ume fruit. Only fruits of perfect quality are suitable for the 3 years maturation during which they produce citric acid said to be very beneficial for health.
Together with a bowl of white rice, 3 years umeboshi truly represents a classic Japanese dish.
