Description
KIHADA is the Japanse name of the yellow cedar found in Hokkaido. Its bark is used in traditional herbal medicine. The KIHADA honey has a clean sweetnesss with a slight citrus aroma reminding of lemon grass. It tends to crystallize easily, but is delicious even when eaten in its crystallized form. This honey is collected deep in the wilderness, where Ezo deer and bears can also be found. It is becoming even rarer as the summer temperatures in Hokkaido also rise each year.
