Note: In summer, if stored at room temperature for a long time, it is easy to discolor, so please store it in the refrigerator as much as possible.


Using the power of koji, which converts the starchy substance of rice into sugar, we made amazake with only koji and water.
No sugar or sweeteners are used. It has a sugar content of about 40 degrees and can be used as a substitute for sugar. It is also recommended for those who are doing macrobiotics. 200g of amazake is equivalent to the sweetness of about 100g of sugar.


Difference between grain type and ground type:

The grain type and the ground type differ in shade and smoothness.
Since the grain type is the prototype of rice, the sweetness comes out by "chewing".
The smooth type is already grinding, so there is no feeling of rice crushing, but it is easy to drink, and it is easy to blend into the ingredients as a secret flavor in dishes and sweets.
There is no big difference in taste or flavor, so please choose your favorite one from the purpose of use.


About the difference in the color of amazake:

Our amazake uses auto-collected bacteria. Autologous seed bacteria are characterized by the fact that koji tends to be colored. In addition, sweetness is prioritized over color, and the fermentation time is lengthened, resulting in a darker color. Simple recipes
Drink: it is a concentrated type; dilute it about 1.5~2 times with water and enjoy.
It also goes well with soy milk and dairy products.
Amazake yogurt: Add 100g organic (white) rice amazake +
100g soy milk yogurt, mix and freeze.
French toast: 200cc
Soy milk, slice of bread, Brown rice amazake, 70g, 15g honey or other sweetener, olive oil
Sauce: Mix with maple syrup to create a healthy sweet sauce for Japanese style deserts like Mochi balls.
