Sake has been brewed in Japan for over a thousand years and is often considered Japan's national drink. It is made by polishing rice grains to remove the outer layers, which are rich in fats and proteins that can interfere with the fermentation process. The polished grains are then steamed and mixed with yeast and koji (a type of mold) to initiate fermentation. Sake has a relatively high alcohol content, typically ranging from 14% to 20%, and can have a range of flavors, from dry and crisp to sweet and fruity.
